Spring is popping out there and it’s time to get back on the trail! It’s also time to dust off the camp stove, pack up a recipe and get cookin’.
I tested this recipe this Winter on a snowshoe trip in the Olympic National Park. I was targeting something fresh, fast, easy to pack, tasty and warm. This recipe hits all of those attributes and is perfect for your early season hikes. It also cooks up on any capacity camp stove.
Don’t be afraid about packing fresh ingredients. Broccoli and other pre-cut vegetables can last for multiple days on the trail with minimal issue plus you’ll get some welcome micronutrients that will help you refuel in a great way. By the way, this recipe is also vegetarian but satisfying for any hiker. Get out there and enjoy!
